This salad is surprisingly flavorful with fragrant lemon, refreshing mint, and crunchy red cabbage and almonds. The dates add a subtle sweetness. You can serve it as a slaw or as a main dish. This dish also travels well to potlucks and picnics because red cabbage is a hardy leaf that doesn’t wilt like softer lettuces.
Ingredients:
- 1 cup raw almonds, chopped
- 8 cups shredded red cabbage (about 1 medium cabbage)
- 1 red onion, diced
- .75 ounces fresh mint (a large handful)
- 1/2 cup water
- Optional: 3-4 pitted Medjool dates* (use 4 if small, 3 if large)
- 1/3 cup lemon juice
*If the dates are very dry, soak them in the 1/2 cup of water for several hours before blending with the other ingredients for the dressing.
Directions:
- Fill a large bowl with shredded red cabbage, diced red onion, and chopped almonds.
- In a blender, combine the water, mint, dates, and lemon juice. Blend until smooth.
- Pour dressing over salad and mix well. Serve immediately or refrigerate until ready to serve.
