Mashed Cauliflower may be low in carbs but the taste just as good as regular mashed potato. For somebody who avoids potato in his diet it going to be a good alternative. Easier than mashed potatoes with less preparation time and no peeling necessary, this mashed cauliflower recipe is light, buttery and smooth.

Preparation Time: 30 minutes

Ingredients:

  • 2 heads of cauliflower
  • 6 tablespoons ghee (or butter)
  • 1 clove garlic, minced
  • 1 ½ green onion, chopped
  • ¼ cup greek yogurt
  • ¼ cup cheddar cheese
  • ½ teaspoon salt
  • ⅛ teaspoon pepper

Direction:

  1. Remove the outer leaves and chop two heads of cauliflower down to the florets.
  2. Place the cauliflower into a medium pan with about two inches of water and cover with a lid. Steam the cauliflower until fully cooked and tender, then set it aside.
  3. Add five tablespoons of ghee, one clove of minced garlic, and one chopped green onion to a medium saucepan over medium heat. Saute for 5 minutes or until soft.
  4. Add the steamed cauliflower to a large bowl with the sauteed garlic and green onions, greek yogurt, ¼ cup grated cheddar cheese, salt, and pepper. Whip together with an electric hand mixer until smooth.
  5. Place your smooth mashed cauliflower mixture into a large bowl, and garnish with half of a chopped green onion and the one extra tablespoon of melted ghee on top. Serve warm.

Notes: You can also use a food processor to smooth the ingredients together, instead of an electric hand mixer, or mash and mix thoroughly by hand.
